The wine is made using the saignée method, which involves macerating the grapes to extract color and flavor produced by one of the oldest champagne houses, Heidsieck & Co. Monopole, which has been in operation since 1785.
This gives the champagne its delicate pink hue and fruity notes of red berries and cherries. Heidsieck & Co.
